When you get a meal in Tunisia, you usually get a little blob of Harissa on the side. Pretty hot stuff, but tastes great so I had to bring a jar with me. At home, I put a blob on my plate and dunked a piece of lamb in it. All of the sudden I heard a blowhorn and two jets of steam blew out of my ears. Man, that stuff is like 100 times as hot as tabasco. Now I know you have to "step on it". You have to "cut it". You have to mix it with oil and water and other stuff - you can't eat the pure stuff! It will probably keep for years as it's so damned hot it kills all bacteria. From left to right: Date marmalade, HARISSA, Prickly Pear marmalade, and Fig marmalade.
